On a more healthier note; here is a nice salad that will go as a lunch or dinner salad. It also goes well with grilled shrimp, or chicken. |
Recipe
spinach greens
walnuts
goat cheese
dried cranberries
strawberries
honey
ricewine vinegar
sugar
1 lemon
vegetable oil
Directions
well this is a very easy recipe to follow. lets get started. You will need a food processor or a blender to make the dressing. Now, lets get the strawberries in your blender and begin to puree. now add a little honey, and some rice wine vinegar. let them continue to puree, add the juice from a quarter of your lemon and oil. you want enough oil to emulsify and blend with the strawberries. Add sugar to the dressing to your liking. Now you need to clean your spinach, and toss the greens in your dressing. Next add your cranberries, walnuts, red onions, and goat cheese over the salad and serve. enjoy the salad, and like I said you add grilled chicken or shrimp to make it a nice light dinner.
