A nice salad in minutes!
This is a very quick and easy salad that can pair with just about any protien you would like!
You will need the following:
1 fennel bulb
Baby arugula greens
Dried cranberries
Ricotta salata cheese
Pecans
Radishes
Cayenne seasoning
Brown sugar
Butter
Utensils needed are as follows;
1 chef knife
1 mixing bowl
1 cutting board
2 small sauté pans
Instructions are as follows;
Grab your knife and cutting board and set them up to begin a little slicing! Now that you have your board set up, let's grab the radishes! You will probably only need 4-5 pieces! You wanna begin to slice them thin! Next grab your fennel bulb and cut the leaves off and slice them thin as well!
Next, place your sautéed pans on the stove. Now in one place 1 tbls of butter in it, and let get hot! Add your pecans along with 1/2 cup of brown sugar, and a couple pinches of cayenne pepper. Sauté until sugar has Evenly coated the pecans! In the other sauté pan, pour a half cup of extra virgin olive oil and let get get hot! Now sauté your sliced fennel until cooked through! Season with a little salt and pepper.
Ok now use a peeler and shave the ricotta salata until you have enough for 2 salads!
Finally it's time to put this masterpiece together!grab a mixing bowl an place the arugula greens in and toss in your favorite balsamic, or a good raspberry vinaigrette! Top the salad with the cranberries, the sautéed fennel, the toasted pecans, the radishes and the shaved ricotta salata!
You can place your favorite protien with it and you have a nice healthy salad on minutes!!

Healthy Eats!!
Just getting in from work? Don't know what you're gonna do for dinner? Well here you go! Something light, and not to time consuming! 15 minute meal just for those on the go!
You will need:
2 8oz pieces of salmon
2 small bags of baby spinach cleaned!
1/2 lb of fresh lump crab meat
1 jar of Caper berries or capers
1 Fresh tomato large diced
1 thinly sliced red onion
1 can of white beans drained
Fresh chopped garlic
1 lemon cut in wedges
I bottle of extra virgin olive oil
Directions are as follows:
Grab a small cast iron skillet and pour 2 tbls of the extra virgin olive oil in it! Turn the pan on medium heat! Let the pan get hot! In the meanwhile, season your salmon with a little salt and pepper!
When the pan gets hot enough place the salmon inside the pan skin side down as shown above! Let the salmon cook for about 4 min on both sides (depending on how you like your salmon cooked)! Pull the salmon off and place on a paper towel lined plate! This is to soak up the excess oil! Alright next grab a mixing bowl and and place the spinach, tomato, red onion, about 1 oz of caper berries with very little juice, a tbls of chopped garlic, the crab meat, and the white beans in it! Drizzle extra virgin olive oil, and squeeze the juice of the lemon wedges over the top with a little salt&pepoer and toss! You're all done! A nice light dinner, that includes all components of a main course meal in 15 minutes! Try it at home and be sure to let me know how it turns out! If any questions just go to the link and ask me! Eating good on the go!
First we begin with seasoning 4 nice 8 oz pieces of salmon with salt and pepper! As shown above! (Place them in the refrigerator until we need them again) Next we get 1 pound of fresh lump crabmeat and place into a bowl. You wanna pick through it for overlooked discarded shells!! In a seperate bowl you wanna mix 1 heaping spoon full of mayonnaise, 1 tsp celery salt, 1 egg, a pinch of garlic, 1 tsp of Dijon mustard. Mix very well, so all flavors incorporate with each other. Now you grab that crab meat and fold it into the mix, trying to keep your crab meat somewhat whole! Now, grab a sleeve of ritz crackers and and mash into crumbs! ( you may use a food processor if need be). Add crumbs a little at a time, you don't want too much crumbs it make your mix dry! Ok, almost done! Grab the salmon out of the fridge and scoop about 4 oz of mixture onto each piece of salmon. Place in an oven safe pan and bake on 300 for approximately 20 min! Check the fish for your desired doneness!
It should look like the picture shown above! Next thing you pull the salmon out of the pan, and eat with a nice salad or a combination of your own starches and vegetables! I ate mine with a little hollandaise and roasted potato! Yummerz! Lol! I hope you all try this one at home, it's one you will definitely enjoy!
